Instructions
Candied Lemons
- Thinly slice lemons.
- Briefly blanch slices in boiling water (1 minute).
- In a separate pan, combine sugar, water, and a pinch of salt (optional), bring to a boil.
- Add lemon slices, simmer for 30-40 minutes, or until translucent.
- Drain, cool, and finely chop. Reserve the syrup.
Mascarpone Cream
- Zest 1 lemon, combine with sugar, and rub together.
- Whisk egg yolks and sugar/zest mixture until pale and fluffy.
- Add mascarpone, limoncello, and vanilla extract (if using), whisk until smooth.
- Whip heavy cream to stiff peaks.

Assembly
