Chocolate Cheesecake with Blackberry

Ingredients

For the base

  • 250g of chocolate chip cookies (like Oreo, without filling)
  • 125g of melted unsalted butter

For the filling

  • 200g of dark chocolate (70% cocoa)
  • 300g of cream cheese
  • 250g of mascarpone
  • 300ml of heavy cream
  • 1 teaspoon of vanilla extract
  • 175g of sugar
  • 3 eggs

For the topping

  • 250g of blackberries
  • 2 tablespoons of sugar
  • 1 tablespoon of lemon juice
  • 50ml of water

Instructions

Base

  1. Crush the cookies in a food processor or place them in a sealed plastic bag and crush them with a rolling pin until they become a fine crumb.
  2. Mix the crushed cookies with the melted butter until the mixture is even.
  3. Press the mixture into the bottom of a 22cm (8.5 inches) round springform pan, creating a compact base. Refrigerate while preparing the filling.

Filling

  1. Preheat the oven to 180°C (350°F).
  2. Melt the dark chocolate in a double boiler or microwave, stirring until smooth. Set aside to cool slightly.
  3. In a large bowl, beat the cream cheese, mascarpone, and sugar until smooth and creamy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Add the vanilla extract and mix until combined.
  6. Slowly add the melted chocolate to the mixture, stirring until everything is well combined.
  7. Pour the filling over the chilled cookie base in the springform pan.
  8. Bake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly wobbly.
  9. Turn off the oven, leave the door ajar, and let the cheesecake cool inside the oven to room temperature. Then refrigerate for at least 4 hours, or overnight, to set.

Topping

  1. In a small saucepan, combine the blackberries, sugar, lemon juice, and water.
  2. Cook over medium heat until the blackberries break down and the sauce thickens, about 10 minutes.
  3. Allow the sauce to cool completely before spreading it over the chilled cheesecake.

Serving

  1. Carefully remove the cheesecake from the springform pan.
  2. Spoon the blackberry sauce over the top of the cheesecake before serving.
  3. Slice and enjoy your Chocolate Cheesecake with Blackberry!
