Chocolate Cheesecake with Blackberry
Ingredients
For the base
- 250g of chocolate chip cookies (like Oreo, without filling)
- 125g of melted unsalted butter
For the filling
- 200g of dark chocolate (70% cocoa)
- 300g of cream cheese
- 250g of mascarpone
- 300ml of heavy cream
- 1 teaspoon of vanilla extract
- 175g of sugar
- 3 eggs
For the topping
- 250g of blackberries
- 2 tablespoons of sugar
- 1 tablespoon of lemon juice
- 50ml of water
Instructions
Base
- Crush the cookies in a food processor or place them in a sealed plastic bag and crush them with a rolling pin until they become a fine crumb.
- Mix the crushed cookies with the melted butter until the mixture is even.
- Press the mixture into the bottom of a 22cm (8.5 inches) round springform pan, creating a compact base. Refrigerate while preparing the filling.
Filling
- Preheat the oven to 180°C (350°F).
- Melt the dark chocolate in a double boiler or microwave, stirring until smooth. Set aside to cool slightly.
- In a large bowl, beat the cream cheese, mascarpone, and sugar until smooth and creamy.
- Add the eggs one at a time, beating well after each addition.
- Add the vanilla extract and mix until combined.
- Slowly add the melted chocolate to the mixture, stirring until everything is well combined.
- Pour the filling over the chilled cookie base in the springform pan.
- Bake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly wobbly.
- Turn off the oven, leave the door ajar, and let the cheesecake cool inside the oven to room temperature. Then refrigerate for at least 4 hours, or overnight, to set.
Topping
- In a small saucepan, combine the blackberries, sugar, lemon juice, and water.
- Cook over medium heat until the blackberries break down and the sauce thickens, about 10 minutes.
- Allow the sauce to cool completely before spreading it over the chilled cheesecake.
Serving
- Carefully remove the cheesecake from the springform pan.
- Spoon the blackberry sauce over the top of the cheesecake before serving.
